Rare opportunity! After 26 years of service, our Director of Culinary Services will soon be retiring. As a result, Willow Brook Village now seeks a highly energetic, self-motivated individual for the position of Director of Culinary Services (full-time). We’re looking for an individual with a true passion for food excellence to join our award-winning culinary team.
The Director of the Culinary Services will plan and direct all activities of the culinary services for our residents, staff, guests and special events. The Director will also serve as a food service manager by preparing, executing, and accounting for food products and fiscal responsibilities under a restaurant model of service. Other key responsibilities of this position include implementing departmental culinary standards, policies, and procedures, overseeing and scheduling all culinary staff at Delaware Run in line with proper scheduling template and departmental budget, and developing and conducting training for culinary staff.
The Director will also work to oversee food and supply purchasing, par levels/inventory, and create suggestions for the use of food-in-progress as menu alternatives. This individual will procure all food, equipment, and supplies for meals, will conduct interviews and hire qualified culinary staff and complete performance evaluations, and develop standardized recipes to regulate quality and quantity of food prepared. She or he will work with Dietitian and Village skilled nursing administrator to plan recipes and menus for regular, therapeutic diets, and health care resident diets. Director will monitor and adjust productivity of all foodservice staff according to job descriptions to ensure that meals are served timely, at appropriate temperatures, and of expected quality, make frequent inspections of food, work, storage, and serving areas, and work with banquet preparation and oversees the dining room supervisor/special events coordinator.
Requirements of the position include a culinary degree from an accredited culinary school/program and/or Bachelor’s degree in food service (preferred), certification in dietary management (CDM) or willingness to obtain, Serve-Safe certified, a minimum of three years management and five years food service experience, excellent communication, organizational/multi-tasking skills, computer literacy/scheduling software, and exemplary leadership skills. Director must have the ability to work flexible schedules (including evenings and some weekends) to oversee quality service.
